From the hills of Concepción de Ataco near the Santa Ana volcano, this El Salvador single origin is rich, comforting, and deeply satisfying. Grown on Finca San Luis, this coffee reflects generations of care from the Duarte family, who have been planting primarily Bourbon for over 50 years. This lot, however, features the Centroamericano (H1) hybrid—a compact, dwarf varietal crossing Sarchimor and the Ethiopian heirloom Rume Sudan—selected for both resilience and cup quality.
What truly defines this coffee is the natural process. After meticulous hand-sorting to remove underripe cherry and defects, whole cherries are patio sun-dried on raised beds for 15–20 days, allowing fruit character to fully integrate into the seed. That slow, careful drying brings out deeper sweetness, heavier body, and a tart acidity. The result is a stimulating yet balanced cup.
Maiden selected this lot for its character, structure, and approachability—a grounded, expressive coffee that’s easy to enjoy and rewarding to return to.
