Named after the Mam word for “water spring,” Finca Huixoc has been producing exceptional coffee since its founding in 1940 by José Olivio Chavez, a pioneer in Guatemalan coffee exporting and marketing. Nestled in the lush mountains of La Democracia in Huehuetenango, the farm is sustained by natural springs that not only nourish the coffee plants during the dry season, but have also powered the estate’s mill for decades.
The region’s unique combination of rich volcanic soil, steady rainfall, and high-altitude climate provides the perfect conditions for growing high-quality arabica. These elements converge to create a coffee that reflects the natural abundance of Huehuetenango- high in sweetness and acidity with a heavy mouthfeel.
